The material covered in the lectures on non-equilibrium dynamics (and much more) can be found in this recent review article. Instructions on what part of the article will be covered can be found at the end of the lecture notes. The hydrodynamic approach to quantum field theory out of equilibrium is discussed in sections 3.1 and 8.2 of the review. In the context of integrable systems the approach was developed in this recent paper.
